Tuesday blues

Today I had instant breakfast, half a peanut butter and honey sandwich with half a glass of milk (non fat) and for dinner mini pork chop with an apricot pistachio, oven baked polenta and a spinach side salad.  Blood sugar is 93 (which is good)

Monday morning

I splurged.  I went to Starsmucks (*sobs* don't hate me) and got a piece of pumpkin bread and a cocoa-cappuccino (grande, I'm not that greedy).  I have a meeting with a client and I need a boost.  I'm still on the hunt for a gym, but need my paycheck first.

late sunday night

Blood sugar 112 (yay) and a really good dinner. Pork loin stuffed with apples and shallots with spinach salad and rice. It was really yummy.

Pork Loin:
Thinly slice 1 apple (I had golden delicious) and 1 shallot.  Toss with a 1tbsp salt, 1 tsp cumin, 1 1/2 tsp dried orange peel (1 tsp fresh zest works too) and 1tsp crushed, dried rosemary.  Butterfly the loin (which sounds frightening, but is rather easy) and evenly layer the apple mixture.  Roll or fold (depending of the thickness or the stuffing and the size of the loin) the loin and secure with skewers.  Bake on a tray with a rack for 50 minuets at 350 degrees F.  Let rest 10 minuets.

Sunday

Saturday was instant breakfast and pad thai with chicken for dinner.  I had no lunch and my blood sugar was 121.  High, I know.  I am also removing the vanilla soy from my diet.  It is too sweet (which was a shock to me).  Today I had toast with margarine and my meds with a cup of coffee.  I'll be making pork loin with apples, zucchini and carrots, side of spinach salad for dinner.  I'll post a recipe later.

Weekend plans

Will have brunch, my pill and chores today.  I will start my project at 2.  There is no scale in my house, so I have do idea how to get my weigh in for Monday (since I stated the blog of Tuesday).

late friday

Okay, here is my rundown

Ate a PBJ at 12 (brunch)
Soy Iced Chai at starsmchucks at 3
Dinner was egg drop soup with tuckey stock, mushrooms, carrots, and onions (no peas or spinich on hand)

They botched the blood donation and my blood sugar was I think 119 (the chai up-ed the sugar intake.)

Friday

I almost forgot to eat dinner last night (a PBJ).  I got up late today, so I'll have a light brunch (most likely ceral with soy milk) and at 1 I am donating blood.   My weekend will be dedcated to my work and it's also lent, which means no meat.  I predict a bad day
